Ich kann es kaum glauben, es ist tatsächlich schon der 1. Advent. Seid ihr schon in Weihnachtsstimmung? Ich muss zugeben bis vor wenigen Tagen war ich so gar nicht in Weihnachtsstimmung, doch langsam kommt sie. Die Kinder und ich haben bereits vor einigen Tagen das erste Mal Weihnachtskekse gebacken. Ich liebe diesen Duft frischgebackener Kekse sehr und kann nicht genug davon bekommen.

Aus diesem Grund gibt es diese Woche neben grossen Neuigkeiten auch noch ein gesundes Backrezept für euch aus meinem Weihnachts Backbuch, welches ich letztes Jahr zusammengestellt habe. Das Backbuch enthält unzählige Backrezepte, die alle ohne Weizen und Industriezucker sind.

Von Cookies über Muffins, bis hin zu Pralinen und Pudding ist alles mit dabei. Die Rezepte sind sehr einfach nachzumachen, da ich viele davon mit meinen Kindern zusammen, gebacken habe. Also auch perfekt, wenn du Anfänger bist oder wenig Zeit hast.

Vegane Lebkuchen Schokoladen Muffin mit Schokoladen Frosting

Zutaten für 6 Muffins:
100g Buchweizenmehl, ½ TL Backpulver, Prise Salz, 1 EL Lebkuchengewürz, 1 EL Zimt, 3 EL Ahornsirup, 100ml Mandelmilch, 2 El Kokosöl geschmolzen, 1 EL Rohkakaopulver

Zutaten Frosting:
2EL Mandelmus, 1 EL Rohkakaopulver, Schuss Mandelmilch, ½ TL Lebkuchengewürz, ½ TL Zimt, 1 EL Ahornsirup

Zubereitung:

  • alle trocknen Zutaten in Schüssel geben, danach Milch und Kokosöl untermischen und auf 6 verschiedene Muffinformen füllen
  • bei 180 Grad Umluft ca. 20-25min backen
  • 2 EL Mandelmus, 1 EL Rohkakaopulver, Schuss Mandelmilch, Lebkuchengewürz, Zimt und Ahornsirup mischen und auf den abgekühlten Muffins als Frosting verteilen.

I am very excited to finally write my blogposts also in English for all my beautiful English subscribers.

This week I will share a beautiful recipe with you which I created last Advent Season with my kids for my healthy baking book. The book is at the moment only in German available but soon there is one in English too.

I am also very happy to say that from now you will get every Sunday a new blogpost to read and I am planing to share lots of other healthy and nourishing recipes with you. My recipes are all not only healthy and nourishing, they are easy to make, they do not need much time and also most of the recipes are for kids too as my kids try them not always but most of the time they do.

Today I am sharing a beautiful refined sugarfree and vegan XMAS baking recipe with you.

This year even more than every other year, I think it is important to nourish yourself with selfcare and also nourishing food.

Recipe: vegan gingerbread and chocolate muffin with chocolate frosting

Ingriedients for 6 muffins:
100g buckwheat flour, ½ small teaspoon baking powder, little bit of sea salt, 1 teaspoon of gingerbread spice and one teaspoon of cinnamon, 3 teaspoon maple syrup, 100ml almond or oatmilk, 2 teaspoon melted  coconut oil, 1 teaspoon raw cacao

Ingriedients Frosting:
2 teaspoon almond butter, 1 teaspoon raw cacao, 1 teaspoon oat or almond milk, ½ teaspoon gingerbread spice and ½ teaspoon cinnamon, 1-2 teaspoon maple syrup

Preparation:

  • put all dry ingredients in a big bowl and mix them together, then add the milk and the coconut oil and the maple syrup mix again until it is a creamy mixture
  • then put it into 6 muffin forms and bake it at 180 degrees for about 20-25 Minutes
  • mix all the ingredients together and when the muffins are cooled down but it on top of the muffins
