Iam back after my break last month. During my time out abroad I was able to gather a lot of inspiration and new impressions and am really motivated to share them with you. I was really inspired by Italy and Spain and today I have a super simple and delicious recipe for you.
For me, Italy and antipasti clearly belong together. So while in Italy I loved going to markets and buying fresh, delicious antipasti and making dishes at home.
One of my absolute favorites, I would like to share with you today. This aperitif platter is not only made in no time, it simply tastes heavenly and nourishes the body and soul in a wonderful way. The avocado not only brings countless vitamins and minerals, but also healthy fats for the body, which are essential for hormone function and much more. The tomato is also such a versatile fruit and full of vitamins and minerals. The basil and the lime, as well as the salt, give you a maximum taste experience and the crunchy effect with the almonds rounds it all off perfectly.
super simple avocado tomato aperitif platter
Ingredients (for 2 people):
- Three beefsteak tomatoes or approx. 200g cherry tomatoes
- 1 avocado
- 1 lime
- a handful of fresh basil
- 30g peeled almonds
- sea-salt
- optionally about 1-2 tablespoons cold-pressed olive oil
Preparation:
Wash the basil and tomatoes. Then cut the tomatoes into slices and place them on a large plate. Halve the avocado, remove the stone and cut the flesh into chunks. Add them straight to the tomatoes. Chop the basil into small pieces with a large knife and distribute evenly on the aperitif platter. Season generously with a sea salt shaker. Finally, halve the lime and spread the juice over the aperitif platter (especially over the avocado). You can sprinkle some olive oil on top if you want. As a last step, take a small frying pan and chop the almonds beforehand and fry them in the pan for a few minutes. For crunchy enjoyment, spread on the aperitif platter.
Tip: It's worth putting a little bit of everything in your mouth. The almonds give it a wonderful crunchy effect, the avocado with the lime and salt not only brings a soft texture, but also freshness and spice and the tomatoes and basil round it all off and bring the perfect combination.
